I think that depends partially on your distribution. But you can start by looking for these two packages:
- oooqs (quickstarter running in the KDE tray)
- oooqstart-gnome (same for Gnome)
I'm not sure if they are named differently on other distributions, I'm running Gentoo. But searching for everything related to "openoffice" should let you find the packages.

I'd say you still try ooqstart-gnome. I'm using fluxbox, so I'm in a similar situation. However, Gaim, K3b, GDesklets and more all show up in the "tray" (part of the fluxbox taskbar), so maybe you just give it a try?
Even if it does not show up there, you still have quickstart functionality, you just can't directly start applications from there.
